To be honest, I had the same train of thought when I got into VESC. Now that some of the products are presumingly “Plug’n’Play”-ish, I foolishly thought I can get away with it.
Yet you will end up realizing that all VESC components use vastly different standards, different components and are not following a common system that you simply plug in.
As an electronics beginner myself, I can only recommend to get comfortable with soldering. You will need it eventually. And you will learn a and unlock a new skill in your life

Soldering is not a rocket science…well unless you actually solder rockets. 
It seems a bit scary and overwhelming in the beginning, but the learning curve is not as steep as it looks like.
